At the designated time, we'll meet at the entrance to the Olivos de las Ánimas estate, right in the Punta del Este countryside. Ready to discover one of the most exquisite products in the region?
We'll kick things off with a walk through the olive grove rows, learning about the different varieties cultivated and their agricultural characteristics. We'll talk about production methods, comparing traditional techniques with organic practices, and understand how factors like soil, orientation, and the Atlantic Ocean influence the quality of the olives.
Next, we'll head into the mill, the technical heart of the process. Here we'll follow the production of extra virgin olive oil step by step: from the reception and cleaning of the olives, to the milling, paste mixing, and cold mechanical extraction.
We'll explore key concepts such as traceability, acidity, and quality parameters, and learn about the estate's sustainable production model, including how organic waste is repurposed to reduce environmental impact and close the production cycle.
We'll then move to the estate house for a guided tasting of 2 or 3 oils, learning to identify attributes such as fruitiness, bitterness, and pepperiness, accompanied by olives and homemade focaccia.
To round things off in style, we'll sit down for a lunch of ribeye steak, seasonal sides, a glass of wine, and soft drinks, finishing with a traditional Martín Fierro dessert of cheese and quince paste. Enjoy!
